What motivated you to pursue a career as a chef?

Growing up in the rural setting of Nuwakot and later transitioning to Kathmandu for higher education opened my eyes to numerous learning opportunities. The environment was unfamiliar, the methods distinct, and the educational system unique. It was during this period that I recognized the importance of entrepreneurship alongside education. This realization led me to pivot towards the culinary arts, seeing it as a way to not only pursue my passion but also capitalize on the potential of my surroundings. When I understood that culinary skills could significantly enhance education, I directed my focus towards cooking. With unwavering determination and self-assurance, I gradually established myself as a chef.

When did you become certain that this profession was suitable for you?

While pursuing my undergraduate studies in Kathmandu, I seized opportunities to work in the United Arab Emirates (UAE). Experiencing the diverse opportunities presented in dynamic cities like Dubai, which I had never envisioned coming from a rural background in Nuwakot, solidified my determination. Witnessing the advancements made in the hospitality industry in Dubai greatly influenced my decision to pursue a career in it. From the outset, I harbored no regrets; I was confident from the very first day that this profession was the right fit for me.

How would you describe your journey as a chef?

Commencing as an assistant in a standard restaurant, my culinary journey swiftly gained momentum in Dubai. I never looked back. Serving as an inflight chef for Etihad Airways in the first-class and residence cabins at Abu Dhabi International Airport Hotel brought me immense fulfillment surpassing that of celebrity status. It transcended mere cooking and training; it was a genuine art form. Serving passengers in the first-class and residence cabins of Etihad Airways’ flights at an altitude of 35,000 feet was not just a job but an exhilarating experience. Serving not only Hollywood celebrities but also royal families and political leaders from various countries during this journey was invaluable to me.

What opportunities and challenges exist in this field?

Culinary is akin to an art form. It involves not only crafting delectable dishes but also presenting them with aesthetic appeal. The possibilities are boundless. This field is not merely a job or a career but a passion. Both opportunities and challenges abound in this arena, much like in life itself. Embracing the challenge of becoming a distinguished chef is also an opportunity. Success is reserved for those who persevere, exhibit patience, and continually strive for excellence, while failure awaits those who lack diligence and fortitude.

Culinary pursuits may not always align with conventional career or educational paths. In a field where parental approval may not always be forthcoming, the arduous journey of a chef striving for success is often fraught with obstacles. Opportunities may not always be viewed favorably, and attaining recognition after years of hard work may not always be esteemed. However, in a rapidly burgeoning tourism industry where there is an escalating demand and necessity for chefs, I remain confident in its reliability.

How can Nepal benefit from the knowledge and expertise gained?

I have endeavored to contribute to the advancement of tourism in Nepal by actively participating in various culinary forums and advocating for the potential of Nepal and Nepali tourism. I have dedicated considerable effort to creating fusion cuisine using Nepali ingredients alongside dishes from different cuisines. Bringing renowned chefs from diverse backgrounds to Nepal and aiding in Nepal’s development has been my aspiration. Actively engaging in international forums to play a role in Nepal’s progress has been my endeavor. Furthermore, I have plans to establish a culinary college in Nepal to equip Nepali students with international competence in the field.

What role should the state play in the development of this sector?

In the context of the state’s role in fostering the development of the country’s tourism sector, it is imperative to recognize the significance of culinary arts. This sector remains largely overlooked by the state. However, without culinary development, achieving tourist satisfaction—an essential component for tourism sector growth—remains unattainable. Therefore, concerted efforts should be made to concurrently develop the culinary sector alongside tourism. Nepal currently has limited provisions for culinary education, necessitating an expansion of public awareness in this regard. It is not just about education; it represents a lucrative career path, and becoming a chef can yield substantial income, a fact that should be disseminated to the public. If harnessed effectively, this sector has the potential to make significant contributions to the country’s development, warranting its promotion through public outreach.

How does a chef establish themselves in the international market?

This realm epitomizes prestige. As I have previously mentioned, culinary arts are considered an art form globally. Renowned celebrity chefs lead lives that rival—if not surpass—those of celebrities from other domains. There is no compromise between earning potential and reputation. Consequently, this field is viewed as a distinguished career path and recognized on the international stage.”
